  • 1. Pick a pot for the soup. First, use it to brown the ox tail with butter, salt and pepper. Must sear all sides which means browning all sides. Remove and reserve.
    2. If it is oily, pour some of the oil out, leave around 2 tablespoons of oil, remain heated on medium and begin sweating the onion, carrot and leek, season with salt and pepper for 10 minutes.
    3. Add tomatoes, turn up the heat and stir for 3 minutes, tomatoes will start to melt, splash in the rum. Pour in the broth and water, add the reserved ox tail, cloves and apples. Simmer for 2 ½ hours under very low heat.

    Aomori Apple Soup with Ox Tail
    Ingredients: (serving size: 2)
    • Aomori Fuji apples 2 pieces, divided in 6 slices per an apple
    • Ox tail 8 pieces, from large to small
    • Japanese carrot 1/2 piece, finely diced
    • Onion 1 piece, halved
    • Japanese fukanegi 1 piece, sliced
    • Whole peeled tomatoes 1 can
    • Rum 85ml
    • Beef broth 750ml
    • Water 11/2 can (using the can of peeled tomatoes)
    • Cloves 4 pieces
    • Butter 4 tablespoons
    • Sea salt and black pepper to taste
